Fern Fiddleheads

You must always cook fern fiddleheads thoroughly before eating; never eat them raw.

Safety and Preparation Rules

  • Never eat raw: Eating raw or undercooked fiddleheads causes acute stomach sickness, nausea, vomiting, and diarrhea.
  • Cooking destroys toxins: Boiling or steaming for about 5 to 10 minutes neutralizes natural toxins and enzymes like thiaminase.
  • Best edible species: The Ostrich Fern (Matteuccia struthiopteris) is the most popular choice, while Lady Ferns and Hart’s-tongue Ferns are also safely edible when cooked.
  • Clean them well: Wash away the brown, papery husk and trim any tough stem ends before cooking.
